Caponata Parmigiana: A Masterclass in Layering Sicilian Flavors

The Science of the Perfect Caponata Parmigiana

Caponata Parmigiana is a "Flashy MOB" dish that demands respect for its technical components. Unlike a standard vegetable bake, this recipe marries the agrodolce (sweet and sour) profile of a traditional Sicilian caponata with the structural elegance of a Parmigiana di Melanzane. The goal is to achieve a contrast between the silky, vinegary aubergines and the rich, melted cheese topping.

Tip: To prevent your aubergines from becoming oil-logged sponges, ensure your frying oil is at least 180°C (350°F). If the oil is too cool, the cellular structure of the aubergine will absorb the fat rather than searing the exterior.

Essential Ingredients

  • 3 large aubergines (eggplants), cut into 2cm cubes
  • 2 tins (400g each) of high-quality chopped tomatoes
  • 1 large red onion, finely diced
  • 3 tbsp capers (rinsed)
  • 100g Kalamata olives, pitted and halved
  • 2 tbsp granulated sugar
  • 60ml red wine vinegar
  • 250g vegetarian mozzarella, sliced or torn
  • 50g vegetarian hard cheese (style of Parmesan), grated
  • A large bunch of fresh basil
  • Olive oil, salt, and black pepper
Note: Always check that your hard cheese and mozzarella are labeled as vegetarian, as traditional versions often use animal rennet.

Technical Execution Steps

  1. The Aubergine Prep: Generously salt the aubergine cubes and let them sit in a colander for 20 minutes. This draws out excess moisture and breaks down the bitter compounds. Pat them bone-dry with a kitchen towel before cooking.
  2. The Sear: In a large pan, fry the aubergine in batches until golden brown. Do not overcrowd the pan, or they will steam instead of frying. Set aside on paper towels.
  3. The Agrodolce Base: Sauté the red onion until translucent. Stir in the tomatoes, capers, and olives. Simmer for 10 minutes. Add the sugar and red wine vinegar, allowing the sharp scent of the vinegar to cook off slightly.
  4. The Fusion: Fold the fried aubergines into the tomato base. Season heavily with black pepper and torn basil.
  5. The Layering: In a baking dish, create a layer of the caponata mix, followed by a layer of mozzarella. Repeat until the dish is full, finishing with a generous coating of the vegetarian hard cheese.
  6. The Bake: Place in a preheated oven at 200°C (400°F) for 20–25 minutes until the cheese is bubbling and has formed a golden-brown crust.
Warning: The vinegar in the sauce can react with aluminum pans, potentially altering the flavor. Use stainless steel, ceramic, or cast iron for the best results.

Serving and Pairings

This dish is best served "settled"—allow it to rest for 10 minutes after exiting the oven so the layers can firm up.
