Zesty Carrot, Coriander and Ginger Soup: A Warming Nutrient Powerhouse

The Timeless Appeal of Carrot, Coriander, and Ginger

There is something inherently comforting about a vibrant bowl of orange soup. This specific trio—carrot, coriander, and ginger—has become a hallmark of modern British home cooking, blending the earthy sweetness of root vegetables with the citrusy notes of fresh herbs and the warming heat of ginger. It is a recipe that bridges the gap between simple peasant fare and sophisticated health food.

Historically, while carrots are a staple across Europe, the addition of ginger and coriander seeds reflects a fusion of traditional Western ingredients with Eastern spice profiles. This combination not only elevates the flavor but also significantly boosts the nutritional profile of the dish. Why This Soup is a Health Essential

From a nutritional standpoint, this soup is a "gold medal" winner. Carrots are famously packed with beta-carotene, which the body converts into Vitamin A, essential for eye health and immune function. The ginger adds a potent anti-inflammatory kick, aiding digestion and providing a natural warmth during colder months. Furthermore, the inclusion of red lentils provides a source of plant-based protein and soluble fiber, which helps keep energy levels stable and promotes heart health.

Note: Using red lentils as a thickener is a fantastic way to increase the satiety of the soup without needing heavy cream or potatoes.

Ingredients

  • 900g (2 lb) carrots, scrubbed and chopped
  • 100g (4 oz) red lentils, washed and drained
  • 1 large onion, finely chopped
  • 1 large garlic clove, crushed
  • 5cm (2 in) piece of fresh ginger, peeled and grated
  • 1 tbsp coriander seeds
  • 4 tbsp fresh coriander (cilantro), chopped
  • 1 litre (2 pt) vegetable stock
  • 1 tbsp extra virgin olive oil
  • Black pepper to taste

Cooking Instructions

  1. Heat a small pan over high heat and dry roast the coriander seeds until they start to pop. Grind them to a coarse powder using a mortar and pestle.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, frying for a few minutes until soft and translucent.
  3. Stir in the ground coriander seeds and fry for another minute to release the oils.
  4. Add the chopped carrots and grated ginger. Cover and cook over moderate heat for about 15 minutes, allowing the carrots to soften slightly and absorb the aromatics.
  5. Pour in the vegetable stock and the red lentils. Simmer for 20 minutes until both the carrots and lentils are tender.
  6. Let the mixture cool slightly before blending until smooth. Stir in the fresh coriander just before serving to maintain its bright flavor.
Tip: For an extra layer of flavor, garnish with a swirl of natural yoghurt or a few toasted pumpkin seeds for added crunch.

Serving Suggestions

This soup is ideal for a "lunch on the go" or as a lighter alternative to a classic cooked breakfast. It pairs beautifully with a slice of crusty rye bread or even a few oatcakes topped with hummus. Because it freezes exceptionally well, it is the perfect candidate for weekend meal prep, ensuring you have a nutritious meal ready for a busy work week.

Warning: When blending hot liquids, always ensure the blender lid is secure and start at the lowest speed to avoid splattering and potential burns.
