One-Pot Moroccan Magic: Chickpea, Aubergine & Date Tagine

The Soul of the Souk in Your Kitchen

Close your eyes and imagine the sun setting over the Atlas Mountains, the air thick with the scent of toasted cumin, sweet cinnamon, and earthy turmeric. The Moroccan tagine is more than just a recipe; it is a celebration of slow-living and communal warmth. Historically, this dish was cooked in a clay vessel over a small charcoal fire, allowing the ingredients to meld into a rich, aromatic symphony. Our Chickpea, Aubergine & Date Tagine captures that ancient magic, bringing a piece of the Mediterranean spirit to your dinner table.

The beauty of this dish lies in the contrast of flavors and textures. The aubergine acts like a sponge, soaking up the smoky spices until it becomes buttery and tender. The chickpeas provide a hearty, protein-packed bite, while the Medjool dates are the "hidden gems," offering bursts of honey-like sweetness that cut through the savory depth of the sauce. It is a soul-warming meal that proves vegan cooking can be just as indulgent as any meat-based counterpart.

Note: While a traditional clay tagine is beautiful, a heavy-based Dutch oven or a deep lidded frying pan works perfectly for this recipe.

Ingredients You’ll Need

  • 2 large aubergines, cut into 3cm chunks
  • 1 large red onion, finely diced
  • 3 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 100g Medjool dates, pitted and halved
  • 1 tin (400g) chickpeas, drained and rinsed
  • 1 tin (400g) chopped tomatoes
  • 500ml vegetable stock
  • 2 tbsp tomato purĂ©e
  • Spices: 1 tsp cumin, 1 tsp ground coriander, 1 tsp cinnamon, 1/2 tsp turmeric
  • Fresh coriander and flaked almonds for garnish
  • Olive oil, salt, and pepper

Step-by-Step Instructions

  1. Heat a generous glug of olive oil in a large pot. Add the aubergine chunks with a pinch of salt and fry until they are golden and softened. Remove and set aside.
  2. In the same pot, add the onion and sautĂ© for 5–8 minutes until translucent. Stir in the garlic, ginger, and all the spices. Fry for 2 minutes until the kitchen smells incredible.
  3. Add the tomato purée and stir well, followed by the chopped tomatoes, vegetable stock, and those sweet halved dates.
  4. Return the aubergines to the pot and add the chickpeas. Bring to a gentle simmer.
  5. Cover with a lid and cook on a low heat for 30–40 minutes. The sauce should thicken and the aubergine should practically melt.
  6. Season to taste with salt and pepper. Serve over fluffy couscous, garnished with fresh coriander and toasted almonds.
Tip: For an extra layer of flavor, zest half a lemon over the dish just before serving. The acidity brightens the deep, earthy spices beautifully.
Warning: Be careful not to over-stir once the aubergines are soft, or they will break down into a mush rather than holding their shape.
