Decadent Chocolate Cupcakes with Creamy Peanut Butter Frosting

The Perfect Salty-Sweet Duo

There is perhaps no combination more iconic in the world of baking than chocolate and peanut butter. As a professional chef with over 25 years in the kitchen, I have found that while trends come and go, the demand for this specific pairing remains eternal. These cupcakes are designed to be indistinguishable from their wheat-based counterparts—moist, tender, and deeply chocolaty, topped with a frosting that strikes the perfect balance between salty and sweet.

Note: For the best results, ensure your eggs and butter are at room temperature (around 70°F) to prevent the batter or frosting from splitting.

The secret to a successful gluten-free cupcake lies in the structure. By using a carefully balanced flour mixture, we avoid the "gritty" texture often associated with gluten-free treats. Ingredients

  • 1 ½ cups Gluten-Free All-Purpose Flour Blend
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon xanthan gum (omit if your blend already contains it)
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • ¾ cup whole milk (or dairy-free alternative)
  • ½ cup avocado or canola oil
  • 2 teaspoons pure vanilla extract
  • ¾ cup boiling water
  • For the Frosting: 1 cup creamy peanut butter, ½ cup unsalted butter (softened), 2 cups confectioners' sugar, 3 tablespoons heavy cream.

Instructions

  1. Preheat your oven to 350°F and line a standard muffin tin with paper liners.
  2. In a large bowl, whisk together the flour blend, cocoa powder, baking powder, baking soda, salt, xanthan gum, and sugar.
  3. Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes.
  4. Stir in the boiling water by hand (the batter will be very thin). Pour the batter into the prepared liners, filling them about two-thirds full.
  5. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. Let them cool completely on a wire rack before frosting.
  6. To make the frosting: Beat the peanut butter and butter together until smooth. Gradually add the confectioners' sugar and cream, whipping until light and fluffy.
  7. Pipe or swirl the frosting onto the cooled cupcakes.
Tip: If you want an even deeper flavor profile, add a teaspoon of instant espresso powder to the dry ingredients; it intensifies the chocolate without making the cake taste like coffee.
Warning: Do not frost the cupcakes while they are even slightly warm, or the high fat content in the peanut butter frosting will cause it to melt and slide off.
