The Ultimate Double-Ginger Chews: A Spicy Texas-Sized Treat

The Heart and Soul of a Texas Cookie Jar

In my Fredericksburg bakery, the air is usually thick with the scent of browning butter and caramelizing sugar. But when the Double-Ginger Chews are in the oven, the whole street knows it. As a Texas girl born and bred, I’ve never been one for subtle flavors. My philosophy is simple: if you’re going to make a dessert, make it big, make it bold, and for heaven’s sake, don’t skimp on the "sinful" parts. These cookies are the embodiment of that spirit—sassy, spicy, and just a little bit over-the-top.

I call these "Double-Ginger" because we don't just rely on the pantry-staple ground ginger. We fold in bits of crystallized ginger that act like little hidden treasures, giving you a chewy, fiery burst of heat in every bite. They have a deep, molasses-rich soul that reminds me of the old-fashioned baking my grandmother used to do, but with a spiky, modern attitude that fits right in with my red high-top sneakers.

Note: These cookies are meant to be soft and chewy, not crisp. The secret lies in the molasses and the careful timing of the bake.

If you find yourself craving more of those warm, comforting spices after trying these, you absolutely must try our Tropical Carrot Cake with Coconut–Cream Cheese Frosting. It’s another Fredericksburg favorite that brings that same "bigger is better" Texas energy to the table.

Ingredients for Ginger Perfection

  • 3/4 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1/4 cup unsulphured molasses
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped crystallized ginger

Bringing the Heat: The Steps

  1. Preheat your oven to 350°F. Line two large baking sheets with parchment paper or grease them lightly with butter.
  2. In a large bowl, cream the butter and 1 cup of sugar together until light and fluffy. This should take about 3 minutes with an electric mixer—don't rush it!
  3. Beat in the egg and the molasses until the mixture is smooth and dark.
  4. In a separate bowl, whisk together the flour, ground ginger, baking soda, cinnamon, cloves, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Fold in the chopped crystallized ginger by hand.
  6. Roll the dough into balls about the size of a large walnut (remember, we like things big in Texas!). Roll each ball in the extra granulated sugar until well-coated.
  7. Place the balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10 to 12 minutes. The tops should be slightly cracked but the cookies should still feel soft.
  8. Let them cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Tip: For the best texture, use a Microplane or a sharp knife to get the crystallized ginger into very small bits. You want the flavor distributed throughout the dough rather than having one giant spicy chunk!

Baking is about having fun and being creative. Don't be afraid to let these cookies be a little "free-form." In my kitchen, we don't aim for perfection; we aim for flavor that makes you want to close your eyes and savor the moment. These chews are the perfect companion for a hot cup of coffee or a tall glass of cold milk. Enjoy a taste of the Hill Country!
