The Soul of the Mediterranean in a Pocket
There is a specific kind of magic that happens when sun-ripened tomatoes meet the salty, crumbly tang of feta cheese. Itâs the flavor of a Mediterranean summerâbright, bold, and unpretentious. For many of us, lunch has become a chore, a "drab cheese or tuna sandwich" eaten hurriedly over a keyboard. But it doesn't have to be that way. This Feta, Sun-Dried Tomato, and Herb Packed Pitta is a reminder that real food is about vibrant colors and the joy of "eating the rainbow."
Inspired by the simplicity of coastal Greek cuisine, this recipe celebrates ingredients in their most honest form. Itâs about the peppery bite of rocket, the buttery creaminess of avocado, and the aromatic soul of fresh basil. When you tuck into this pitta, you aren't just fueling your body; you're taking a brief, sensory vacation to a sun-drenched terrace. Ingredients
- 2 wholemeal pitta breads
- 75g feta cheese, cubed
- ½ red bell pepper, finely sliced
- Âź red onion, finely sliced
- 20g sun-dried tomatoes, rehydrated and finely sliced
- 20g rocket (arugula)
- 10 black olives, pitted and halved
- 10 fresh basil leaves, shredded
- ½ avocado, cut into bite-sized cubes
- 1 tbsp extra virgin olive oil
- Freshly ground black pepper, to taste
Preparation Steps
- Gently toast the pitta breads until they are warm and slightly puffed, which makes them much easier to slice open without tearing.
- In a medium mixing bowl, combine the feta, red pepper, red onion, sun-dried tomatoes, rocket, olives, basil, and avocado.
- Drizzle the extra virgin olive oil over the mixture and season generously with black pepper. Toss gently with a spoon to ensure everything is coated while keeping the avocado cubes intact.
- Carefully slice open the top of each pitta and pack the Mediterranean mixture deep into the pockets.
- Serve immediately while the pitta is still warm, or wrap it tightly in parchment paper for a "mighty fine" lunch box surprise.
