Crispy Hasselback Potatoes with Homemade Peri Peri Dressing & Feta

Technical Precision: The Ultimate Hasselback Potato

The Hasselback technique is more than just a visual flex; it is a functional method to maximize the surface area of a potato, allowing for optimal fat penetration and a high-contrast texture between the crispy ridges and the fluffy interior. When paired with a deeply caramelized, roasted Peri Peri dressing and the briny punch of feta, this dish moves from a simple side to a technical masterpiece of vegetarian cooking.

Tip: To ensure you don't cut all the way through the potato, place it between two wooden spoon handles. The handles act as a physical stop for your knife, ensuring perfectly uniform slits every time.

Ingredients

  • 12 large new potatoes
  • 2 red bell peppers
  • 1 red onion
  • 2 lemons
  • 2 ears of corn on the cob
  • 2 cloves of garlic
  • 2 tsp dried oregano
  • 1.5 tbsp red wine vinegar
  • 2 hot red chillies
  • 400g tin black beans, drained and rinsed
  • 200g block of feta cheese
  • 1/2 cucumber, de-seeded and sliced
  • Fresh coriander for garnish
  • High-quality olive oil, salt, and black pepper

Instructions

  1. Potato Preparation: Preheat your oven to 180°C fan (200°C/400°F). Using the wooden spoon method, make vertical slits 2mm apart along the entire length of each potato. Place on a roasting tray, drizzle generously with olive oil, and season with salt and pepper. Roast for 50 minutes until the edges are golden and crisp.
  2. Roasting the Aromatics: On a separate tray, place roughly sliced red peppers, sliced red onion, and one lemon (halved, cut-side down). Roast for 45 minutes. The goal is to achieve slight charring on the pepper skins.
  3. Corn Processing: Place the corn on the cob on a third tray (or with the potatoes if space permits), drizzle with oil, and roast for 30 minutes, rotating every 10 minutes for even browning.
  4. Emulsifying the Peri Peri: Once the peppers and onion are soft, add them to a high-speed blender. Squeeze in the pulp from the roasted lemon halves. Add the garlic, oregano, red wine vinegar, chillies, and the zest and juice of the remaining fresh lemon. Blitz with a stream of olive oil until a smooth, vibrant sauce forms.
  5. Salsa Assembly: Slice the kernels off the roasted corn. In a bowl, combine the corn with the black beans and sliced cucumber.
  6. Final Plating: Spread a layer of the Peri Peri sauce over the crispy potatoes. Top with the corn and bean mixture, then crumble the feta over the top. Garnish with fresh coriander.
Warning: Ensure the potatoes are fully cooked and the "fans" have opened up before removing them from the oven. If the center is still firm, the sauce will not penetrate the layers properly.
Note: Roasting the lemon cut-side down is essential for caramelizing the natural sugars, which balances the intense heat of the red chillies in the dressing.
