Sun-Drenched Mediterranean Vegetables: A Taste of the Old World

The Soul of the Mediterranean in Every Bite

In the sun-soaked coastal villages of the Mediterranean, food is more than just sustenance; it is a celebration of the earth's bounty. This recipe for Mediterranean Vegetables captures that "cucina povera" spirit—the traditional philosophy of using simple, fresh ingredients from the garden and elevating them with wild herbs and golden honey. There is an emotional connection to this style of cooking that reminds us of slow afternoons and family tables filled with laughter.

The beauty of this medley lies in the contrast of textures: the earthy bite of red potatoes, the sweetness of roasted carrots, and the sudden burst of flavor from a charred cherry tomato. While these veggies are a star on their own, they pair beautifully with vibrant seafood like Island Coconut Shrimp with Pineapple Sauce or provide a refreshing, earthy balance to the zest of Crunchy Baja Fish Tacos. They even serve as a sophisticated, healthy side to balance out the indulgence of Crispy Seasoned Chicken Wings during a weekend gathering.

Tip: For the most authentic flavor, try using high-quality Greek or wildflower honey to bring out the floral notes of the dried herbs.

Ingredients

  • 2 tablespoons raw honey
  • 2 teaspoons minced garlic
  • ¼ teaspoon each: dried basil, marjoram, oregano
  • ā…› teaspoon each: dried rosemary, sage, thyme
  • ½ teaspoon salt and ¼ teaspoon ground black pepper
  • 3 to 4 medium red potatoes, chopped into 1-inch pieces
  • 1 small zucchini, chopped into 1-inch pieces
  • 1 (10.5-ounce) package cherry tomatoes, halved
  • 1 cup sliced mushrooms
  • 1 small carrot, sliced into ¼-inch rounds
  • 3 tablespoons olive oil
Note: While fresh herbs are wonderful, dried herbs work perfectly here as they stand up well to the high heat of the air fryer, creating a more concentrated herbal crust.

Preparation Steps

  1. In a small bowl, whisk together the honey, garlic, and all the dried herbs (basil through thyme) with the salt and pepper. Set this glaze aside.
  2. In a large mixing bowl, combine the chopped potatoes, zucchini, halved tomatoes, mushrooms, and carrot rounds.
  3. Drizzle the olive oil over the vegetables and toss thoroughly to ensure everything is evenly coated.
  4. Transfer the vegetable mixture into the air fryer basket. Roast at 380°F for 15 minutes.
  5. Carefully transfer the partially roasted vegetables back to the large bowl. Add the honey-herb mixture and toss to coat every piece in the sweet glaze.
  6. Move the glazed veggies into a 7-inch baking pan and place the pan inside the air fryer basket. Roast at 390°F for a final 5 minutes to set the glaze and finish the caramelization.
Warning: Ensure the vegetables are cut into relatively uniform sizes to prevent the smaller pieces from burning before the potatoes are fork-tender.
