Umami in a Tin: The Soulful Sicilian Pasta with Sardines and Chili

The Coastal Soul in a Simple Bowl

There is a certain romance hidden within the humble pantry. While many associate "gourmet" with expensive cuts of meat or rare truffles, the true soul of Mediterranean cooking often lies in a small, silver tin. This Pasta with Sardines, Anchovy, and Chili is a tribute to the sun-drenched shores of Sicily, where the "poor man’s fish" is celebrated as a king. It is a dish that speaks of the sea—salty, bold, and invigorating.

The magic of this recipe is how the ingredients transform. The anchovies, sharp and pungent on their own, melt into the olive oil to create a deep, savory base known as "umami." The sardines provide a meaty texture, while the chili adds a flicker of warmth that dances on the tongue. It’s a meal that feels like a warm breeze on a summer evening, even if you’re just standing in your kitchen on a Tuesday night.

Note: Using wholewheat pasta adds a nutty depth that perfectly complements the oily richness of the fish, while also boosting your fiber intake.

Ingredients for a Mediterranean Feast

  • 400g wholewheat spaghetti
  • 4 tbsp extra virgin olive oil
  • 8 anchovy fillets, finely chopped
  • 2 x 120g tins of sardines in olive oil (drained and flaked)
  • 2 garlic cloves, finely chopped
  • 1 medium red chili, deseeded and finely chopped
  • 400g tin of tomatoes (blended until smooth)
  • Zest and juice of 1 unwaxed lemon
  • 2 tbsp fresh parsley, chopped
  • A knob of unsalted butter
  • Freshly ground black pepper

Step-by-Step Preparation

  1. Bring a large pot of salted water to a boil. Cook the spaghetti until 'al dente' (usually about 10 minutes).
  2. While the pasta cooks, prepare the sauce. In a large high-sided frying pan, combine the olive oil, chopped anchovies, flaked sardines, garlic, chili, blended tomatoes, and the lemon zest and juice.
  3. Simmer the sauce over a medium heat, stirring occasionally. You want the sauce to thicken and the flavors to marry—this should take about the same time as the pasta.
  4. Once the sauce has thickened, stir in the fresh parsley and the knob of butter. Season generously with black pepper.
  5. Drain the pasta, reserving a splash of the cooking water. Toss the spaghetti directly into the sauce, adding the reserved water if needed to ensure every strand is perfectly coated.
Tip: If you find the flavor too intense, a handful of toasted breadcrumbs (pangrattato) sprinkled over the top adds a wonderful crunch and tempers the saltiness.

Serving Suggestions

This pasta is a complete meal in itself, but it pairs beautifully with a crisp green salad. If you are hosting a dinner and want to start with a light snack, our Honey-roasted cashew nuts provide a lovely sweet-and-salty contrast to the main event. Alternatively, if you’re looking for a grain-based dish for another night, you might enjoy our Pearl barley risotto with broad beans and mint.

Warning: Anchovies are naturally very salty. Avoid adding extra salt to the sauce until you have tasted the finished dish!
